Ingredients:

  • For Cooking:
    • 1 can refried black beans
    • 8 0z Mexican chorizo
    • 2 strips smoked bacon (diced)
    • 1 ½ teaspoon Chipotle peppers in adobo, chopped
    • 1 jalapeno, diced and seeded
    • 4oz cream cheese
    • 1 cup white onion, diced
    • 1 clove garlic, chopped
    • 1/2 cup diced tomatoes
    • 1 cup milk
    • 1 teaspoon smoked paprika
    • ½ cup water
    • 1 teaspoon salt
  • For Serving:
    • Tortilla chips
    • Green onion & shredded cheese for garnish
    • Queso Fresco
    • Crudité

How To Make Camila Alves McConaughey's Black Bean Dip With Seared Chorizo

To make this savory black bean dip, start by setting one side of the multicooker to Sear/Sauté on HI, allowing the pot to preheat for about 7-10 minutes. Add chorizo and bacon, searing until browned—use lean chorizo if possible, or leave about 2 tablespoons of fat if needed.

Next, switch to Slow Cook by pressing the “1” or “2” pot symbol, depending on which side of the multicooker is in use.

Add onions and garlic to the pot and cook until softened. Then, add black beans, tomatoes, cream cheese, shredded cheese, and seasonings, stirring them with the onions and garlic, and cover to slow cook for 30-45 minutes. Stir the dip halfway through cooking, then keep it on the Keep Warm setting so everything will be ready to serve together.

Once the dip is fully heated and smooth, garnish with shredded cheese, green onion, and queso fresco. Serve with tortilla chips and fresh veggies, and enjoy!
